How to calculate
Convert each moisture basis to a water fraction of wet mass. Conserve dry-solid mass and calculate the final wet mass at the target fraction; the difference is water removed or added.
Dry mass=initial wet mass×(1−initial wet fraction); final mass=dry mass/(1−target wet fraction)
Worked example
100 kg at 20% wet-basis moisture contains 80 kg dry solids. At target 10% wet basis its total mass is 88.8889 kg, so 11.1111 kg water is removed. The initial 20% wet basis equals 25% dry basis.
Assumptions and input details
Ideal water-only mass change with constant dry solids. Wet-basis moisture is below 100%; dry-basis moisture may exceed 100%. A wetter target reports pure-water addition rather than negative drying. No drying time, energy requirement, dry-solid handling loss, spoilage or safe storage/food-processing target is inferred.

Unit definitions
Unit selection is independent of language. Each selector contains only units for its physical quantity. Calculations use defined base units internally.
The 19 mass definitions distinguish avoirdupois and troy measures, metric and regional measures. Japanese kin is 600 g; mainland Chinese shijin is 500 g.
Regional measures are not interchangeable merely because their names look similar. This is a documented selection, not a claim to include every historical unit.

Using this calculator
Can I enter my own problem?
Yes. Replace the example values with your own inputs. The result, calculation steps, tables and applicable diagrams update from those inputs. Blank or invalid values clear the result; example values are never silently substituted for missing inputs.
Are the results exact?
Results use floating-point arithmetic and displayed rounding. Read the formula, assumptions and any stated data precision before interpreting the result.
Is my input uploaded?
The calculation runs in your browser. No account, file upload or external AI service is required. Inputs are not saved between page reloads.
